It looks like this will come to the point of you having to stand your ground while perhaps having to negotiate some sort of deal where you don't loose out financially but they get the new items / changes they have now decided they want..... Perhaps over the holiday period would be a good time to devise some terms and conditions regarding measurements, sizes etc. and drawing up a quote form that customers sign before you start work. You could then choose to use it with larger jobs or those with very specific requests.
